This week’s recipe is a tasty and impressive looking little dish. I’m planning on using it as a starter for my MS diet christmas meal! It’s a fun dish to make and is actually quite easy. It won’t take too long before you can say ‘Luncheon is served.’
These rolls are delicious and it’s hard to stop at just one or two. As you bite into the crunchy cool cucumber and you start to taste the creamy avocado, followed by the tang of the capers – an unusual combination this is, but it works well.
Avocados are a good choice for mono-unsaturated and polyunsaturated fats which, when eaten in moderation, are beneficial for you. In addition, the good fat in the avocado helps with the absorption of vitamin A from the cucumber and vitamin E from the avocado as they are fat soluble vitamins (meaning they need fat to be able to dissolve and be used in your body). Avocados certainly are one of the most perfect foods for your MS diet
These rolls are a great starter or side dish and I also see this working as a topping over mixed salad leaves. The avocado mixture can be made in advance as the lemon juice will stop any browning. However I recommend that you assemble just prior to serving and keep in the fridge until needed. I actually used the avocado mixture with my zucchini noodles the other day. It was wonderfully tasty!
Here is what you need and how to make it:
1 large cucumber
3 ripe avocados
1/4 cup capers
1/2 tsp sea salt
freshly ground black pepper
2 Tbsp lemon juice
1/4 cup finely chopped parsley
1/8 cup finely chopped dill
Wash and dry the cucumber, then use a peeler or mandolin to cut thin slices lengthwise.
Mash the avocados in a bowl, then mix in the remaining ingredients.
Place the cucumber slices on a board and spread the avocado mixture along each length thinly.
Serve with extra parsley or dill.
Ready in: 15 min
