I did a talk at the MS Society’s annual WAMS (women against MS) event on Saturday. The theme of the day was diet and how it can help manage MS. The MS society had taken so much trouble to organise a day filled to the brim with interesting info about the healing potential of food! Three speakers communicated varying points of view on diet so that the ladies could decide what was right for them and their own unique make up. I was honoured to be part of it!
As you all know, I feel that we need to be doing far more than just eating a balanced diet. We need to be radical in our approach to food if we are going to see the results we are looking for. I tried to sensitively communicate this message when it was my turn to talk. The reaction I got from the ladies in the audience was very positive and enthusiastic. I felt that I had offered them hope and a feeling of control over their MS.
The knowledgeable dietician who spoke before me presented a more traditional way of looking at diet and said something that I wholeheartedly agree with. We all need a little of what we fancy. Yes, we all need a treat every now and then! I do, however have a few requirements: it must be gluten, dairy and refined sugar-free. I did a smoothie demo after the talk and then handed out these pecan, oat & maple balls to every audience member. The ladies absolutely LOVED them. One even remarked that I should be selling them! Perhaps a little further in the future.
I’m always on the look out for tasty MS Diet sweet treats that are not going to leave me feeling fatigued and ill. These power balls tick every healthy sweet treat box for me! I have been making different versions of them for years and like all recipes, they started out as an experiment. I just threw a few things into the blender to taste how they would combine together. Time and time again, I have LOVED the result! Even my husband and children think they’re delicious.
They are full of the right kind of sweetness and they’re packed full of dense, nutritious ingredients such as pecan nuts, oats and coconut and sweetened with maple syrup and honey. These are all high quality ingredients that will work to stabilise your blood sugar levels and give you stable energy. The good fats and plant protein are an unbeatable MS diet combination. Two of these balls keep me going for a few hours at least.
Choose one day a week to make a batch and you’ll love just having them in your fridge for when you need a quick pick-me-up snack. They’re great if you’re craving something sweet but don’t want to go near refined sugar.
I really hope you enjoy this MS diet treat and that it calms any sugar cravings you may have!
Makes: 12 Balls
Ready in: 15 minutes (or an hour if you want them a bit firmer)
2 cups gluten-free oats
1 cup desiccated coconut (organic and preservative free)
3.5 oz/100g pecans
1 tsp cinnamon
3 Tbsp maple syrup
2 Tbsp set honey
1 Tbsp coconut oil
a little water
Put all the ingredients except for half the pecan nuts in a food processor and blend until they are fully combined and are sticking together nicely.
You may need to add a little water if they’re not sticking together so well and are still a bit dry and crumbly (be careful not to make it too wet though).
Add the rest of the pecans and pulse until combined but still chunky.
Roll a heaped teaspoon sized portion of mixture into little balls.
Refrigerate for at least an hour until firm. They can be kept in the fridge for up to a week but I’m sure they won’t last that long 🙂
